Lunch: New Ideas Always Welcome

Raise your hand if you often get stuck trying to come up with new ideas for lunch? I typically eat the same thing for lunch each day: salad. While I may try different ingredients on my salad, it is definitely my favorite thing to eat for lunch. I can get in most of my day’s fruits and vegetables in one fell swoop at lunch although at my home, vegetables are a staple with dinner as well and fruits are always available at all hours of the day.

Wraps are another lunch time favorite. They are quick and easy to assemble and any number of ingredients may be used to keep from having the same old boring lunch every day. Start with a spread such as hummus or a homemade spread with a Greek yogurt base. Pile it high with vegetables and keep it vegetarian by using beans for a protein source or add chicken, turkey, fish, pork, or egg to meet protein needs. Don’t be afraid to try a variety of combinations — get creative with it!

Ingredients for Wrap

Food prepping ahead of time is particularly helpful for lunches. It will save a lot of time getting lunch meals ready during the week. Choose a size of tortilla that will best meet your needs. I prefer a medium sized shell. For this particular wrap I used shredded greens and canned diced tomatoes to keep the prep time fast and easy. I used my own hummus recipe, Angela’s Hungry Hummus, for the spread. A great trick to minimize prep time is to use a roasted rotisserie chicken. Simply strip the meat from the bone and store in the refrigerator for use during the week. Cooked chicken may be safely stored in the refrigerator for up to four days. Unused cooked chicken may be safely stored in the freezer in an airtight zipper bag or container for 2 to 6 months. And of course, I added feta cheese. I am a cheese loving fool!

Roasted Chicken and Hummus Wrap

Instructions
  1. Spread hummus evenly on tortilla shell leaving room, about 1/2 inch, along the edges of the shell.
  2. Add chicken, greens, tomatoes, and cheese in a line along the center of the wrap at least an inch from the ends of the tortilla shell.
  3. Tuck each end of the shell inward and roll tightly. Slice in half and store in an airtight container.
