Scrumptious Pear Salad

Christmas weekend we found ourselves near a Harry & David outlet store. I happen to LOVE Harry & David Royal Riviera pears. So I stopped in and grabbed a box of pears and the best part is that they were on sale! I have thoroughly enjoyed those delicious pears over the last week.

This morning as I opened the box to retrieve the very last pear, I noted a recipe card. I know it was in there all week but I was preoccupied and didn’t pay attention. This morning though I stopped to skim over the recipe and was instantly intrigued. Y’all know I had to try it! And trust me, it did NOT disappoint!

Don’t have pears to go on your salad? Try replacing the pears with strawberries, grapes, or apples. Since today’s pear was my last, I plan to try this salad again tomorrow with strawberries instead of pears. Or maybe blueberries and dried cranberries! So many possibilities!

The original recipe calls for blue cheese, which I replaced with feta, and walnut oil, which I replaced with extra virgin olive oil. Additionally, I toasted the walnuts myself. I’ve mentioned before that toasted nuts take on a “nuttier” flavor when roasted. I much prefer walnuts and almonds toasted but if you try it be sure to keep a close eye on them. It only takes a few minutes to toast them and they burn quickly.

  1. Arrange salad greens on four chilled plates.
  2. Place fans of pear slices on lettuce.
  3. Crumble feta cheese evenly on top.
  4. Drizzle dressing generously over the salad. **dressing ingredients and instructions below**
  5. Sprinkle with nuts and serve at once.
Recipe Notes

Dressing ingredients: 1/4 cup Champagne vinegar, 1 tbsp Dijon mustard, 1 tbsp honey, 1/2 tsp sea salt, 1 tsp ground pepper, 3/4 cup extra virgin olive oil

Whisk together the first five ingredients. Gradually whisk in the EVOO. Enjoy!
