Are you in need of a tasty and pleasing recipe that make the kids ask for seconds? I’ve got one for you here! And of course after last Friday’s adventure, it involves grapes. I found out about the grape harvest too late to preserve them. I just didn’t have the time to put into learning how to preserve. Next year I will be on the lookout so that I can get prepared and make some grape jelly or jam. I look forward to it!
I started off with the idea to thread some seasoned chicken and grapes on a skewer. I will share that recipe below. As a side, I tossed small red potatoes in olive oil with minced garlic, oregano, and dried basil then made four foil packets and divided the potatoes between the four packets. I placed sliced onions and shredded Parmesan cheese over the potatoes in the foil packets, sealed the packets, and baked them in the oven on 350 degrees for approximately 40 minutes until the potatoes were tender. Of course, a salad was added to the plate for color and tons of essential nutrients.
Since grilled fruit is one of my favorite things on the planet, I also decided to skewer some strawberries and pineapple with a plan to toss them on vanilla bean ice cream and drizzle with a delicious and robust aged dark balsamic vinegar. Keep in mind, only a very small amount of balsamic vinegar is needed as the flavor is strong. This dessert turned out absolutely delicious. And there was enough grilled fruit for me to bring to work today! Yum!
I can safely say that our dinner was a hit with the hubs and boys! My seven year old devoured his and asked for another skewer. He said “Momma, this is delicious!” The Seasoned Grilled Chicken Skewers would also work nicely as an appetizer or party food, simply thread onto shorter skewers.
